Creamy Chicken Gnocchi Soup

My son was home sick today so I made a big pot of this creamy chicken gnocchi soup for dinner along with a big salad and some fresh baked bread in hopes to make him feel a bit better. My son said this soup was really good and the rest of us thought so too. This creamy chicken gnocchi soup was very quick and simple to make and it tasted creamy, filling, and so delicious. I am looking forward to the leftovers for lunch tomorrow and so is my son.

How to Make Creamy Chicken Gnocchi Soup

Heat the butter and oil in a large skillet over medium-high heat. Add the onions, celery, and thyme leaves then cook, stirring often for 7-8 minutes, or until veggies are tender. Add the shredded carrot and minced garlic then cook, stirring constantly for 30 seconds. Add the flour and cook, stirring constantly for 1-2 minutes. Slowly add the chicken broth while stirring then bring to a gentle boil before reducing the heat to low.

Add the half and half, chicken, gnocchi, and cook for 7-10 minutes, stirring occasionally. Add the spinach and stir to combine. Taste and season with sea salt and freshly cracked pepper, to taste. Ladle into bowls and serve. Enjoy.

Ingredients

  • 3 tbsp butter
  • 1 tsp olive oil
  • 1/2 sweet yellow onion diced
  • 2 stalks of celery diced
  • 1/2 tsp fresh thyme leaves
  • 1 cup carrot shredded
  • 2 cloves of garlic minced
  • 3 tbsp flour
  • 4 cups chicken broth
  • 2 cups half & half
  • 1 1/2 cups cooked chicken chopped
  • 16 oz package gnocchi
  • 2 cups baby spinach
  • Sea salt and freshly cracked pepper to taste

  5. Hi Pam, thanks for the recipe. I love gnocchi and this looks like a great way to serve some. One question I have is how much thyme do I need to use and can I use dried if I don’t have fresh. Thanks again for the recipe, I’m looking forward to a comforting bowl along with a salad for dinner:)

      I would use 1/2 teaspoon of dried thyme.

    Made this tonight for dinner on an unseasonably cold Sunday night in November. Perfect comfort food! The instructions called for thyme, but it wasn’t listed in the ingredients…I used about a tsp of dried (since I didn’t have fresh on hand). To keep it a little lighter, I subbed fat -free half and half (you’d never know!), and skipped the butter. And since my local grocery had rotisserie chicken on sale, I splurged and used that…which really adds a lot of flavor and makes the prep even easier! Super recipe…my husband called it a keeper!

      Thank you for always leaving sweet comments on the recipes you try. I appreciate it! So glad you liked this soup – thanks for letting me know I missed adding the thyme. I used about 1/2 tsp fresh thyme leaves so 1 tsp dried is great. I have corrected the recipe.
