Butter Lettuce Salad with Avocado, Cucumber, and Pine nuts with a Lemon Vinaigrette

Butter Lettuce Salad with Avocado, Cucumber, and Pine nuts with a Lemon Vinaigrette

Oh how I loved this salad! Butter lettuce is so light and delicate but it held up well with the avocado, cucumber, red onion, radish, toasted pine nuts, and shaved parmesan cheese. I tossed this light salad with a homemade tangy lemon vinaigrette that paired nicely with the veggies and the rest of the meal. This butter lettuce salad paired nicely with chicken Francese, orzo with roasted vegetables, and some freshly baked bread for a delicious and hearty meal that we all loved.
