Quick Pickled Asian Vegetables

Quick Pickled Asian Vegetables

I recently had some pork belly on steamed bao buns with pickled veggies and I absolutely loved it. I decided to try and recreate the meal on my own. First, I needed to make some quick pickled Asian vegetables using sliced carrots, cucumber, red onion, and jalapeno using seasoned rice vinegar, a bit of water, and some salt. The pickled veggies tasted amazing with the pork belly and gave the sandwich the zing it needed.

Sounds wonderful, but can one use another kind of chili pepper instead of a jalapeño which is not Asian, like a Thai bird’s eye chili pepper?

    1. Norma,

Absolutely! My store only had teeny tiny Thai chilies and I wanted the chili matchsticks to be similar size to the cucumber and carrot matchsticks which is why I went with the jalapeno.

  2. I love having a jar of pickled veggies in my fridge! So good on everything.

    1. Diana,

Sorry, I’m not sure if they are Keto low carb. The seasoned rice vinegar does have some sugar in it.

  3. How long do these pickled vegetables last for ? Days, weeks, months?

    1. Vickie,

They always get eaten up so quickly in my house so I’m not sure how long they would actually last. Since they are a quick pickle, they wouldn’t last for months. I hope this helps.
