Shaved Kale & Brussels Sprout Salad with Apple, Cheddar, Pecans & Balsamic Vinaigrette

Shaved Kale and Brussels Sprout Salad with Pomegranate, Apple, Sharp Cheddar, Sugared Pecans and White Balsamic Vinaigrette

I know the name of this salad is long but every ingredient is so important I didn’t want to leave any out!! I loved the crunch from the combination of kale, brussels sprouts, cabbage, and apples along with the sweetness from the sugared pecans and the creamy sharp cheddar cheese combined with the tangy vinaigrette. This salad has a perfect combination of flavors and textures for me. I love that this salad is easy enough to make and serve with a weeknight meal but it’s also nice enough to serve at a holiday gathering too.

How to make a Shaved Kale & Brussels Sprout Salad with Apple, Cheddar, Pecans & Balsamic Vinaigrette

Combine the vegetable oil, olive oil, white balsamic vinegar, minced garlic, sugar, sea salt, and freshly cracked pepper, to taste. Mix until well combined. Side Note: We prefer a tangier vinaigrette which is why I do equal parts oil and vinegar. If you prefer a less tangy vinaigrette, use half the vinegar.

Combine the shaved kale, Brussels sprouts, and cabbage together in a bowl. Top with the pomegranate seeds. green apple, sharp cheddar, and sugared pecans. Drizzle the white balsamic vinaigrette, to taste. Serve and enjoy.
