Roasted Halibut with Tomatoes, Lemon, and Dill

Not only is this dish very healthy, colorful, and delicious, it only takes a few minutes to throw together and bake. You can’t beat that! My local grocer had some wild-caught halibut on sale and I couldn’t resist it. I grabbed some lemon, fresh dill, and a pint of mixed grape tomatoes to help make the halibut extra tasty. This roasted halibut with tomatoes, lemon, and dill was cooked and on our table within 20 minutes. We all loved the tender fish and the roasted tomatoes were amazing too. I really, really loved this dinner.

How to Make Roasted Halibut with Tomatoes, Lemon, and Dill

Preheat the oven to 425 degrees. Coat a large baking dish with olive oil cooking spray.

Cut the halibut into four pieces. Place into the baking pan and drizzle each piece of fish with a bit of olive oil; rub all over evenly. Season both sides of each piece of fish with sea salt, freshly cracked pepper, and garlic powder, to taste. Sprinkle each side with fresh chopped dill. Place a very thin slice of lemon on each piece of fish. Sprinkle the tomatoes all over the baking sheet. Drizzle a bit of oil on them and season them, to taste.

Place into the oven and roast for 10 minutes, or until just before it’s flaky. Don’t overcook – it will continue to cook outside of the oven for a few minutes. Remove the baking pan from the oven and serve with additional lemon if desired. Enjoy.
