Spicy Asian Cucumber and Tomato Salad with Cilantro

Spicy Asian Cucumber and Tomato Salad with Cilantro

I was serving some Asian tacos for dinner and wanted a fresh and healthy side dish with a kick. Luckily, I found a recipe on Food and Wine that I could adapt a bit to suit our tastes. This salad was flavorful, crunchy, sweet, and spicy and we all loved it. My son thought it was spicy but ate every bite and I loved the crisp cucumbers with a kick and felt it paired nicely with the tacos. My daughter and husband loved this salad and fought over the last of it.

  2. I like this, a lot. We often make a cuke and tomato salad for dinner in the summer, but don’t often use Asian flavors in it. We should — this is so nice. Thanks.

  3. Very refreshing cucumber salad and I can use some of my jalapenos. You have me intrigued though – what are Asian tacos?
